Q. How would I know what files are being copied in USB drive from my HDD? Is there any log where I can check the same ?

Solution:

Yes, You can check the same in FILESMOD.LOG file, located at c:\Progra~1\eScan\log.

But to enable this feaure. First you need to download espatch1.exe from this link. Also you need to change one registry entry after the hotfix is applied

 [HKEY_LOCAL_MACHINE\SOFTWARE\MicroWorld\eScan for Windows\MwMonitor/LogFilesCopiedToUSB]

Note: By default the value will be "0", change it to "1". Now, restart you system and then observe the same.
